My freezer is getting well stocked with FREE Earthbound Farms Organic Carrots.  This week I moved on to preserving them by pickling. 

I’m the first to admit I’m a pickling-aholic.  I like the taste, variety (except sweet!) and color they add to a plate.  For me they kind of finish off the presentation.  This past week I made 2 batches of Zesty Pickled Carrots.  I found the recipe in Sherri Brooks Vinton’s book, Put’em Up!

Organic carrots are usually thinner, less woody, and I think a better size for pickling.  Lucky for us I was able to pick up 3 lbs. for free the week before last at Shaw’s using the $ .75/1 Earthbound Farm Organic Product coupons.  Garlic Cloves, Jalepeno Peppers & Red Pepper Flakes make these ‘zesty’.  I can’t wait to have a couple of these along side a sandwich for lunch!

I also put up 2 batches of Classic Bread ‘N Butter Pickles.  I used the recipe found in the Ball Complete Book of Home Preserving.  These are our son, Sawyer’s, favorite pickle.  I cannot go through a season without making these for him.  :)  

There’s more pickling to come within the next week!  How about you?  What have you been canning?

    I canned 24 pints of Green Beans last wek. I picked up a 1/2 bushel at the farmers market. The farmer told me a 1/2 bushel is 12 lbs. I only like fresh or home canned green beans.

    In the past I have made Golden Glow pickles out of over ripe cukes. It is the same recipe as bread & butter pickles except you use the yellow cukes. Take the seedy part out. I also like to put in a little extra onion. It is my Uky to Lucky recipe.
