FREE Fun For Kids @ Lowe's!

Mother's Day is right around the corner! Bring your child to Lowe's and they can build this awesome Trellis Planter. It makes a perfect Mother's Day gift!

The free workshop will be held on Saturday, April 24th. at 10 a.m. at participating Lowe's stores. You should sign up in advance for these free workshops, and a parent must be present at the workshop with the child. Each workshop runs about an hour and is geared toward kids in first through fifth grade. Many of the projects are completed in much less than an hour. The first 50 kids to sign up for each workshop will get a kit, work apron, and safety goggles for free. Kids also get a badge and certificate when they complete their project.

It's My Day To Cook!

I'm filling in for Sara today over at From Blah to Ta-Daa! She has family and friends visiting from away.


When I posted this Apple-Rhubarb Crisp recipe Sara had left me this nice comment:

"Oh, I'm so jealous of your fresh rhubarb!! It always reminds me of summers at my grandparents' house :) "

I've been very busy this past week in our rhubarb patch but I wanted to do the neighborly thing for Sara (albeit virtual) and bake a desert to bring over for her company to enjoy. Let's keep Sara out of the kitchen so she has more time for visiting. ;)

I found this recipe in May issue of Martha Stewart Living.

Rhubarb Upside-Down Cake

For the Topping:

• 4 Tablespoons unsalted butter melted
• 1/2 Cup Flour
• 1/4 Cup Sugar

For the Cake:

• 1 1/2 Sticks Unsalted Butter, room temperature, plus more for buttering pan
• 1 lb. Rhubarb, trimmed and cut on a very sharp diagonal about 1/2 inch thick
• 1 3/4 Cup Sugar
• 1 1/2 Cups All-Purpose Flour
• 1 1/2 Teaspoons Baking Powder
• 1/2 Teaspoon finely grated orange zest (I chose not to use this) plus 1 teaspoon fresh orange juice
• 2 Large Eggs
• 1 Cup Sour Cream ( I substituted homemade yogurt)

1. Preheat oven to 350 degrees. Make the topping: Stir together, (I used my fingers), butter, flour, sugar, and 1/4 teaspoon salt until moist and crumbly.


2. Make the cake: Butter a 9-inch round cake pan (2 inches deep). Dot with 4 tablespoons butter (cut into pieces). Toss rhubarb with 3.4 cup sugar; let stand.


3. Whisk together flour, baking powder, and 1 1/2 teaspoons salt. Beat remaining stick butter and cup sugar with a mixer on medium speed until pale and fluffy. Beat in zest and juice. Beat in eggs, one at a time, until incorporated, scraping down sides of bowl. Beat in flour mixture in 3 additions, alternating with sour cream/yogurt, until smooth.

Let's start assembling this cake!

Toss the rhubarb again and spread in pan.

Spread cake batter evenly over rhubarb.

Sprinkle crumb topping evenly over batter.

Bake until a toothpick inserted into the center comes out clean and top spring back when touched, about 1 hour. ( I found I needed a half our more!)

Let cool for 10 minutes. Run a knife around edge of cake, and invert onto serving plate.

Let cool completely before serving. Warning! This is a very rich cake!

I'm in the garden .............. (Well the rhubarb patch anyway!)

I feel like I have spent this entire week going between the rhubarb patch, the compost pile and the kitchen. But I am proud of the results. So far I have "put by" 2 batches of Strawberry-Rhubarb Jam, 2 batches of Victorian Barbecue Sauce and have put 2 bags of sliced rhubarb in the freezer for pies. I've depleted the patch by 3/4. I'll let it come up a second time and then I'll slice and bag up enough for a few more pies and crisps in the freezer. I was aghast to see people paying $2.89 for 1 bunch of rhubarb in the produce section of our local grocery store. Rhubarb is the easiest plant to grow! I guarantee you can acquire these plants for free. I dug up 3 crowns from my mother in-law years ago and those 3 crowns have spread as you can see in the above picture. I've read 3 different offer/wanted posts on freecycle this week for rhubarb as well. Just start asking around, people are always willing to share or barter rhubarb. You shouldn't have to pay to start your own rhubarb patch.

That little patch provides us with our first big harvest of the growing season. I've had fun in the kitchen and I'll pass along the Victorian Barbecue Sauce recipe. It was fabulous on ham steaks that we grilled today, salty and sweet! Victorian cooks roasted their meat in huge kitchen fireplaces and enhanced it with homemade sauces concocted from garden staples such as rhubarb. If you grew up with green tomato or apple mincemeat you will truly appreciate the flavor of this sauce. The flavor is similar, but a bit tangy because of the onion & white vinegar.

Victorian Barbecue Sauce

8 cups chopped rhubarb

3 1/2 cups lightly packed brown sugar

1 1/2 cups chopped raisins

1/2 cup chopped onion

1/2 cup white vinegar

1 teaspoon ground allspice

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon salt

1. Prepare canner, jars and lids. (see a canning guide)
2. In a large stainless steel saucepan, combine rhubarb, brown sugar, raisins, onion, vinegar, allspice, cinnamon, ginger and salt. Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently, stirring frequently, until mixture is thickened to the consistency of a thin commercial barbecue sauce, about 30 minutes.
3. Ladle hot sauce into hot jars, leaving 1/2 inch headspace. Remove air bubbles. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
4. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 15 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

Have you signed up for Beech Nut's Let's Grow welcome kit? I signed up for it at the end of February. The site says :

Beech Nut also offers an incentive program. Send in this mail in certificate and 16 proofs of purchase from any Beech-Nut Let’s Grow! product. You’ll get two coupons for $1.00 off four Let’s Grow! products.

Although I've enjoyed the free products that this program has provided me via coupons I think they need to beef up their incentive program. $1.00 off 4? I've actually never purchased "toddler" foods. Our boys always ate what we ate as a family. The Let's grow products that I've seen range in price from $1.49 to $3.29. I guess you could say, after trying it, I have mixed feelings about this program.
