Thursday's Yucky Stuff Is Lucky Stuff

You know that yucky bacon grease you collect in the drip pan of your griddle? Well most people pour it in to a can an keep it in the freezer until dump day. Then we dispose of it. Well here is a tip that I want to pass along to you that I learned again from my mother in law. (She was a wealth of eclectic kitchen knowledge :)

Pour the bacon grease in to ice cube trays and freeze until solid.
I was able to freeze 4, well 3 cubes and 1 crumbly 1. No one said you had to be neat!

Put these in a well marked freezer bag or freezer storage container until you want to make chowder. Each cube is approximately 1 Tablespoon when melted. Instead of paying $4.00 for salt pork as the chowder recipe requests, substitute with bacon grease. You cannot tell the difference!
Yucky bacon grease? I think we are lucky to have a substitution so handy and thrifty!
