If you've noticed that my blogging was rather light this weekend that was because we had 6 10 - 12 yr. old boys over for a sleepover birthday party. It was alot of fun with sledding, hot tubbing, skating under the lights and the creating of their own pizzas for dinner. I was running out of pizza stones to bake on and so I took a leap of faith and baked one of the pizzas on this cast iron skillet. It was just the right size for an individual pizza. The great discovery is that it bakes just as well if not better on the cast iron pan! No greasing or prep work needed. As you can see it lifts right out of the pan! No sticking! I used this
pizza dough recipe, dividing it into quarters. Each quarter makes 1 individual pan pizza. Now I'm on the look out for a large, round, low (or no) sided, cast iron skillet! Pizza stones are pricey but a cast iron skillet is a less expensive, easy to maintain, alternative. I'm loving it!

Keep your eyes peeled for these at resale shops. We have an antique place in town that sells them cheap - you just need to clean them up & re-season them. I love cast iron and rarely cook in anything else anymore! Jen
Hi Jen!
