Thursday's Yucky Stuff Is Lucky Stuff

Check out this hot pepper. It is very wrinkly and at the point where you need to cook it today or throw it in the compost. Chili is not on the menu today and I hate to waste this so let's freeze it for future use.

All you need is an ice cube tray, a can of tomato sauce and a knife with a cutting board to get this job done.

Begin by cutting the pepper in half and removing the seeds and inner fibers. Use gloves if you do not have tough old hands like me. I touched my mouth during this process and the phrase "hot lips Hoolahan" came to my mind. Cut the pepper into strips and then dice them. Fill individual cubes with the diced pepper.

I had enough for 5 cubes. Cover the peppers with tomato sauce, shaking and tapping the sauce to remove air bubbles. As you can see I'm not always the neatest cook in the kitchen! I dribbled. Place your tray in the freezer and leave there until the tomato/pepper cubes are frozen solid.

This is what these handy little packages look like. When I'm making chili I just go to the freezer and take one or two out of the bag depending on how hot I'd like my chili and drop them in the pot.

That hot pepper was just getting to that yucky stage in it's life. When my family is all cozy around a bowl of chili this winter they're going to be lucky I saved it to spice up their dinner.
